Loooooveeee Burdock! I really like cooking it… I find it very very nourishing and cleansing at the same time. It’s always interesting to note that plants show up where they are needed and yet we still pull them out thinking they are “weeds” … such a metaphor.
How can you tell they are young burdocks? Meaning a year old? Size? What else? What’s the best way of digging them out without damaging the roots?
In Vermont the land is full of Burdock! I am sure there is a relationship between them and mycelium? They seem energetically friendly?
Yes, it's crazy that we poison and discard free food and medicine! The first year burdocks will be leaves close to the ground without the stalk coming up in the middle. The second year will have a stalk in the center and in the summer they'll flower and in the fall, go to seed. As far as digging them without damaging the roots, I find It works best to dig a ring around the root, scooping out the soil, and gently ease the whole root out without breaking. And so interesting about burdock and mycelium. I imagine they have a symbiotic relationship. I'll have to look into it. 🌱
